Preparation of Manchurian Sauce

To prepare the Manchurian sauce, firstly, heat the oil in a pan and add the ginger-garlic paste. Fry until the raw smell disappears. Then add the spring onions, green chilies, and capsicum. Fry for 2 minutes. Add the soy sauce, vinegar, tomato ketchup, red chili sauce, and sugar. Cook for 2 minutes or until the sugar dissolves. Preparation of Mushrooms

  1. Clean the mushrooms with a damp cloth. Remove the stems and slice the mushrooms thinly.
  2. In a bowl, combine the corn flour, all-purpose flour, salt, pepper, ginger-garlic paste and water to make a thick batter.
  3. Heat oil in a frying pan over medium heat. Dip the mushroom slices in the batter and deep fry them until golden brown. Drain on paper towels.
  4. In another pan, heat 2 tablespoons of oil over medium heat. Add the onions and fry until golden brown.
  5. Add the garlic, ginger, green chili peppers and fry for a few more minutes.
  6. Add the soy sauce, vinegar, sugar and tomato ketchup and cook for 2 minutes more.
  7. Add the fried mushrooms and cook for 2 minutes more. Serve hot with rice or noodles.”
